Quince

Rarely eaten fresh, quince is most well-known as the main ingredient in menbrillo, a Spanish paste that’s often served with Manchego cheese, or in traditional quince preserves.

Fresh quince turns pink when cooked and can be used in place of apples or pears -their nearest relatives - in nearly any sweet or savory recipe.

Ripe quince are large and yellow and can be stored for up to two months wrapped in a plastic bag in the refrigerator.
