2 pounds carrots plus green leafy carrot tops

5-inch piece fresh ginger

1/3 cup heavy cream (plus 2 tablespoons for garnish)

1 tablespoon butter

1 medium leek, white part only, well-washed and cut into thin 8-inch rings

4 cups milk

1 can (14.5 oz.) chicken broth 
1 can (14.5 oz.) minestrone soup 
1 tablespoon Italian seasoning
4 eggs, well beaten
1/4 cup grated Parmesan cheese
